Not every business suits having a trained somm on the floor, and sometimes your payroll obligations simply don’t allow it. But, having a balanced, interesting and engaging drinks list, and a team with solid knowledge, is invaluable in every business: It enhances the experience of guests and builds their loyalty, gives your team more satisfaction in their roles, and is invariably a revenue builder. 

 

My services are varied and entirely tailored to your business. I offer the following, as individual or ongoing services:

 

  • New-opening wine-lists or complete rewrites of your current lists

  • Foundational or ongoing training for your FOH teams, enabling them to offer informal, knowledgeable and engaging wine advice to guests, whatever their current level of knowledge

  • Seasonal updates to your lists, and corresponding training

  • A focus on wine, or work on whole beverage lists

  • One-off advice, e.g. pairings for a special event, or a hand thinking ahead about wines that work with the next seasons menu

  • Pairing advice for your set menus on an ongoing basis

  • Advice on other sections of your drinks lists, for example, if you would like to increase the quality of your alcohol-free offering 

 

Each consultation is specifically designed around what works in your business; there is certainly not a one-size-fits-all formula. How much your guests are willing to spend, how many bottles works for you, the margins you are seeking, the knowledge level your team are at, and a myriad of other factors, are all important considerations.

Me and My Credentials

​

I have been a certified sommelier with the Court of Master Sommeliers since 2015, and have also been a certified sake sommelier (Sake Sommelier Association) since 2016. I also have a thorough knowledge of beverages in all categories, with a particular soft spot for Belgian beers. I am also strongly of the belief that a strong alcohol-free selection on a list can really make a difference to revenue and guest loyalty. I consider my greatest strength to be in food & drink pairings, and probably few things make me happier in my work than truly harmonious pairings. 

 

In 2022 I was included as one of the 100 most influential women in hospitality, in a list by Code Hospitality. This was in the category of beverage and specifically referred to the quality of my drinks list. I have managed lists in various venue-types and parts of the world for a decade or so, and have worked in hospitality over the last twenty years in everything from branded pubs, to retail, to very fine-dining. Most of you will know me from the pub/ restaurant I most recently co-owned, The Moorcock Inn, Norland, which I’m proud did achieve a fair bit of acclaim in its time.

My experience is not limited to being knowledgeable about wine, but about wine within hospitality businesses. It's also not limited to city venues; lots of my work has taken place in rural destination restaurants, so I'm familiar with writing lists that work for the spectrum of local communities and destination diners.
