Is consultancy for you? Not every business suits having a trained somm on the floor, and sometimes your payroll commitments just don’t allow it. But having a balanced, interesting and engaging drinks list, and a team with solid knowledge, is invaluable in every business. It enhances the experience of guests and builds their loyalty, gives your team more satisfaction in their roles, and is invariably a revenue builder. My services are entirely tailored to your business. I offer the following, as one-off’s or ongoing services: New-opening business drinks-lists or complete overhauls of your current lists Foundational or ongoing training for your FOH teams, to offer informal, knowledgeable and engaging wine advice Regular updates to your lists, and corresponding training I can focus on wine, or put together whole beverage lists One-off advice, e.g. pairings for a special event Pairing advice for your set menus on an ongoing basis Gradual building of lists in ways that are accountant-friendly Advice on other sections of your drinks lists, for example, if you would like to increase the quality of your alcohol-free offering Tailored Service Each consultation is entirely tailored to what works in your establishment, I certainly don't have a one-size-fits-all formula, it's about your business: How much your guests are willing to spend, and what they like, how many bottles works for you, the margins you are seeking, the level your team are at, and a myriad of other factors. Me and My Credentials I have been a certified sommelier with the Court of Master Sommeliers since 2015, and have also been a certified sake sommelier since 2016. I also have a comprehensive knowledge of all beverages in all categories! In 2022 I was included as one of the 100 most influential women in hospitality, by Code Hospitality. This was in the category of beverage and specifically referred to the quality of my drinks list. I have managed lists in various venue-types and parts-of-the-world for a decade, and have worked in the industry for two decades, in everything from branded pubs, to retail, to very fine-dining. But, most of you will know me from the pub/ restaurant I most recently co-owned, The Moorcock Inn, Norland. Personal soft spots are for white Burgundy, Belgian beers, good, varied alcohol-free selections, and little makes me happier than truly harmonious food and drink pairings.
